Geleneksel \u00fcr\u00fcnleri korumak i\u00e7in \u00f6nemli bir ara\u00e7 olan C\u0130, belirli bir alan, b\u00f6lge veya \u00fclke ile ili\u015fkili bir \u00fcr\u00fcn\u00fcn markas\u0131 olarak tan\u0131mlan\u0131yor. C\u0130 tescili, kalitesine, geleneklerine, b\u00f6lgeden hammaddelerine ve yerel \u00f6zelliklerine ba\u011fl\u0131 olarak belirli bir itibar kazanm\u0131\u015f \u00fcr\u00fcnlerin korunmas\u0131n\u0131 sa\u011fl\u0131yor. T\u00fcketiciye g\u00fcvenli \u00fcr\u00fcn sunmak ve \u00fcr\u00fcne g\u00fcvenle ula\u015f\u0131lmas\u0131n\u0131 sa\u011flamak i\u00e7in ortaya \u00e7\u0131kan C\u0130 sisteminde ba\u015fta g\u0131da sekt\u00f6r\u00fc olmak \u00fczere pek \u00e7ok sekt\u00f6rde men\u015fein korunmas\u0131 ama\u00e7lan\u0131yor.<\/p>\n

Kocaeli \u00dcniversitesi\u2019nden Berkay Ercelep ve Dr. Nihan Akdemir\u2019in yapt\u0131\u011f\u0131 \u201cTescilli Co\u011frafi \u0130\u015faretli G\u0131da \u00dcr\u00fcnleri: T\u00fcrk Tatl\u0131lar\u0131 \u00d6rne\u011fi\u201d adl\u0131 ara\u015ft\u0131rma, T\u00fcrkiye\u2019deki tescilli tatl\u0131lar\u0131n b\u00f6lgelere ve kategorilere g\u00f6re da\u011f\u0131l\u0131m\u0131n\u0131 ortaya koyuyor. Betimsel analiz y\u00f6ntemiyle yap\u0131lan \u00e7al\u0131\u015fmada T\u00fcrk Patent ve Marka Kurumu Co\u011frafi \u0130\u015faretler Portal\u0131\u2019ndaki veriler inceleniyor. Gastroia: Journal of Gastronomy and Travel Research Dergisinde yay\u0131nlanan ara\u015ft\u0131rmada, T\u00fcrkiye\u2019deki tescilli tatl\u0131lar \u00e7e\u015fitli \u00f6zelliklerine g\u00f6re de\u011ferlendirilirken, sahip olduklar\u0131 oranlara da dikkat \u00e7ekiliyor.<\/p>\n

\u00c7al\u0131\u015fmada s\u00fctla\u00e7, ke\u015fk\u00fcl, tavuk g\u00f6\u011fs\u00fc, muhallebi gibi s\u00fctl\u00fc tatl\u0131lar\u0131n besin de\u011feri en y\u00fcksek tatl\u0131lar oldu\u011fu aktar\u0131l\u0131yor. Pi\u015firme a\u015famas\u0131nda bu tatl\u0131lara \u015feker eklenmesinin, protein de\u011ferlerinin azalmas\u0131na engel oldu\u011fu belirtiliyor. Ara\u015ft\u0131rmac\u0131lar ayn\u0131 zamanda s\u00fctl\u00fc tatl\u0131lar\u0131n protein, kalsiyum, B2 vitamini a\u00e7\u0131s\u0131ndan zengin oldu\u011funu ve d\u00fc\u015f\u00fck ya\u011f oran\u0131na sahip oldu\u011funu aktar\u0131yor.<\/p>\n

Ara\u015ft\u0131rmada, tah\u0131ll\u0131 tatl\u0131lar aras\u0131nda a\u015fure ve zerdenin en \u00e7ok t\u00fcketilen tatl\u0131lar oldu\u011funa de\u011finiliyor. \u00c7e\u015fitli \u015fekillerde haz\u0131rlanan hamurlara \u015feker, bal ve pekmez kar\u0131\u015ft\u0131r\u0131larak yap\u0131lan tatl\u0131lar ise hamur tatl\u0131lar\u0131 grubuna giriyor. Kaday\u0131f, baklava, k\u00fcnefe, ekmek tatl\u0131s\u0131, revani, \u015fekerpare, lokma tatl\u0131s\u0131, tulumba gibi tatl\u0131lar bu kategoride. A\u00e7l\u0131\u011f\u0131 gidererek zihinsel tatmin sa\u011flayan hamur tatl\u0131lar\u0131, enerji ihtiyac\u0131ndan fazla t\u00fcketildi\u011finde kilo art\u0131\u015f\u0131na ve sa\u011fl\u0131k sorunlar\u0131na neden olabiliyor.<\/p>\n

143 TANE TESC\u0130LL\u0130 T\u00dcRK TATLISI MEVCUT<\/strong><\/p>\n

Ara\u015ft\u0131rmaya g\u00f6re T\u00fcrkiye\u2019nin farkl\u0131 b\u00f6lgelerine ait 143 tane tescilli T\u00fcrk tatl\u0131s\u0131 bulunuyor. 141\u2019i mahre\u00e7 ve 2\u2019si men\u015fe olmak \u00fczere toplam 143 adet kay\u0131tl\u0131 tatl\u0131 var.<\/p>\n

Tescilli C\u0130 tatl\u0131 \u00fcr\u00fcnlerinin tescillerinin y\u0131llara g\u00f6re da\u011f\u0131l\u0131m\u0131 ise \u015fu \u015fekilde:<\/p>\n

T\u00fcrkiye\u2019de 2000 y\u0131l\u0131ndan itibaren tatl\u0131lara co\u011frafi i\u015faret tescilli verilmeye ba\u015fland\u0131. \u0130lk C\u0130 tescili alan tatl\u0131 \u00fcr\u00fcn\u00fc 2000 y\u0131l\u0131nda mahre\u00e7 i\u015faretli \u201cBozda\u011f Kestane \u015eekeri\u201d, ikincisi ise ilk men\u015fe i\u015faretli olan \u201c\u0130zmit Pi\u015fmaniyesi\u201d. Ara\u015ft\u0131rman\u0131n verilerine g\u00f6re 2020 y\u0131l\u0131nda C\u0130 tescilli tatl\u0131 \u00fcr\u00fcnlerinin say\u0131s\u0131nda ciddi bir art\u0131\u015f mevcut.<\/p>\n

Ara\u015ft\u0131rmac\u0131lar, 2021 y\u0131l\u0131nda bu oran\u0131n daha da y\u00fckseldi\u011fini aktar\u0131yor. 2022 Ekim ay\u0131nda 28 adet C\u0130 tatl\u0131 \u00fcr\u00fcn\u00fcn\u00fcn tescillenmesinin, y\u0131l sonuna kadar daha y\u00fcksek bir art\u0131\u015fa i\u015faret etti\u011fi belirtiliyor.<\/p>\n

HAMUR TATLILARI B\u0130R\u0130NC\u0130 SIRADA<\/strong><\/p>\n

Ara\u015ft\u0131rmaya g\u00f6re tescilli C\u0130 tatl\u0131 \u00fcr\u00fcnlerinin grup da\u011f\u0131l\u0131m\u0131nda, f\u0131r\u0131nc\u0131l\u0131k ve pastac\u0131l\u0131k mamulleri, hamur i\u015fleri, tatl\u0131lar (103 \u00fcr\u00fcn) \u00e7ikolata, \u015fekerleme ve t\u00fcrevi \u00fcr\u00fcnler (32 \u00fcr\u00fcn) dondurma ve yenilebilir buzlar (4 \u00fcr\u00fcn) ve di\u011fer \u00fcr\u00fcnler (4 \u00fcr\u00fcn) oldu\u011fu g\u00f6r\u00fcl\u00fcyor. Di\u011fer \u00fcr\u00fcnler grubunda yer alan \u00fcr\u00fcnlerin \u201cBozk\u0131r Tahini\u201d, \u201cSand\u0131kl\u0131 Ha\u015fha\u015f Ezmesi\u201d, \u201cFethiye Tahini\u201d ve \u201cU\u015fak Ha\u015fha\u015f Ezmesi\u201d olu\u015fturuyor.<\/p>\n

EN FAZLA TESC\u0130LL\u0130 TATLI KARADEN\u0130Z B\u00d6LGES\u0130\u2019NDE<\/strong><\/p>\n

Ara\u015ft\u0131rma sonu\u00e7lar\u0131na g\u00f6re Karadeniz B\u00f6lgesi\u2019nde tescilli C\u0130 tatl\u0131 \u00fcr\u00fcnlerinde Bolu (6 \u00fcr\u00fcn) ile ilk s\u0131rada yer al\u0131yor. Bart\u0131n (5 \u00fcr\u00fcn), Kastamonu (4 \u00fcr\u00fcn), D\u00fczce, G\u00fcm\u00fc\u015fhane, Giresun, Ordu (2 \u00fcr\u00fcn) ile Zonguldak, Tokat, Karab\u00fck, Samsun, Rize, Artvin, Trabzon (1 \u00fcr\u00fcn) olmak \u00fczere toplam 30 C\u0130 tatl\u0131 \u00fcr\u00fcn\u00fc bulunuyor.

Tescilli C\u0130 tatl\u0131lar\u0131n \u00fcr\u00fcn s\u0131n\u0131fland\u0131rmas\u0131nda \u201cHamur Tatl\u0131s\u0131n\u0131n\u201d 49 (y\u00fczde 34) \u00fcr\u00fcn ile ilk s\u0131rada yer ald\u0131\u011f\u0131 g\u00f6r\u00fcl\u00fcyor. \u0130kinci \u00fcr\u00fcn s\u0131n\u0131f\u0131 ise \u201cHelva Tatl\u0131s\u0131\u201d 39 (y\u00fczde 28) \u00fcr\u00fcn ile \u00f6ne \u00e7\u0131k\u0131yor.
